Chicken faroosh

Ingredients
- Chicken 1 kg with skin prick well
- Ginger garlic 1 tbsp
- Salt 1 ½ tsp
- White pepper ½ tsp
- Paprika 1 tbsp heaped
- Lemon juice 4 tbsp
- Oil ½ cup for basting
Method
- Prick chicken well and marinate with Ginger garlic 1 tbsp, Salt 1 ½ tsp, White pepper ½ tsp, Paprika 1 tbsp heaped, Lemon juice 4 tbsp for at least 2 hours.
- Place in a baking tray, bake in a preheated oven 180 degree C for 45 minutes, keep adding 1 tbsp oil on top of the chicken after every 10 minutes.Bake till chicken is tender and brown.

Ingredients
- Chicken boneless ½ kg
- Salt to taste
- Black pepper ¼ tsp
- Ginger garlic paste 1 tbsp
- White vinegar 1 tbsp
- Egg 1
- Flour 3 tbsp
- Corn flour 2 tbsp
- Oil for fry
- Ingredients for Sauce
- Oil 2 tbsp
- Spring onion chopped 1
- Garlic chopped 2 cloves
- Green chilies chopped 2
- Ginger chopped 1 piece
- Chicken stock 1 cup
- White vinegar 3 tbsp
- Soya sauce 1 tbsp
- Worchester shire sauce 1 tbsp
- Salt to taste
- Sugar 2 tbsp
- Tomato ketchup 3 tbsp
- Corn flour 1 tbsp
Method
- Cut ½ kg chicken into strips, marinate with salt to taste, ¼ tsp black pepper, 1 tbsp ginger garlic paste, 1 tbsp vinegar, 1 egg, 3 tbsp flour and 2 tbsp corn flour. Deep fry till golden brown. Remove from pan and keep aside.
- In a pan heat 2 tbsp oil, add 1 piece of chopped ginger, 2 cloves of chopped garlic and 2 chopped green chilies. Fry well till golden brown.
- Now add 1 chopped spring onion, 1 cup chicken stock, 3 tbsp white vinegar, 1 tbsp soya sauce, 1 tbsp Worchester shire sauce, salt to taste, 2 tbsp sugar and 3 tbsp tomato ketchup.
- Cook till it comes to a boil. Thicken sauce with 1 tbsp corn flour paste. Now add fried chicken and mix for few seconds.Dish it out and serve hot.

Chettinad Chicken Kuzhambu Authentic Chettinad Chicken Gravy
However much variety of chicken we cook, nothing can take the place of the traditional kuzhambu being made form the time old days. It is compatible with anything we have at home i.e., rice, dosa, idly, roti, chappathi or parotta.If you want the chicken recipe from a grand old lady of chettinad she will be well aware of this recipe only. This is the most favorite chicken item that I cook for all in my home. I too is very happy to cook this as I can escape without cooking anything else for the night and next day’s breakfast side dish. Moreover this is very easy to prepare also. So the younger people can have a go at this recipe. I am sure it won’t turn bad whatever mistake you make.I have already mentioned in my previous blogs on chicken that chicken was never marinated in chettinad before. It was because they used the regular chicken which took much time to cook and the there was time for the masala to get into the chicken pieces. Now we use broiler chicken which gets cooked very fast and if we do not marinate, the pieces will be blunt without any salt or hot taste. So we have to marinate the chicken for any kind of preparation. This Kuzhambu is very easy and tasty if prepared in the pressure cooker. So cooker can be used. Chicken will be cooked soft and the children and the old people will love it

Ingredients
Chicken-1/2 kg
Small onion-30 or big onion-2
Tomatoes-2 (small size)
Garlic-20 pods
Ginger garlic paste- 2 teaspoons (I have shown ginger and the garlic needed)
Chili powder-1 table spoon
Coriander powder-2 to 3 table spoons (depends on the qty of gravy you need)
lemon juice-2 teaspoons
For Marination
Curd-2 table spoons (if there is no curd a teaspoon of lemon juice can be used)
Turmeric powder-1 teaspoon
Chili powder-2 teaspoons
Salt-2 teaspoons
Ginger garlic paste-1 teaspoon
For seasoning
Cardomom-2
Cinnamon-2 small pieces
Clove-2
Birinji leaf-small piece
Star anise-a small piece
Mint leaf-little
Curry leaf little
Fennel seed-1 teaspoon
For grinding (Too much of coconut will spoil the taste and will make the gravy look like kurma)
Cocunut-2 table spoons
Cashewnut-5 (Kas Kas was used traditionally, since it is difficult to grind cashews are substituted)
Fennel seeds-1 teaspoon
Method
Wash the chicken pieces nicely
Marinate with the items given in ‘To marinate’
Let it stay for 1 hour
Mince the onion, garlic and tomatoes
Grind the items in “to grind to a smooth paste
Keep the cooker in the stove
In 1 table spoon of oil season the kuzhambu with the items in ‘To season’
Sauté the onion, garlic, ginger garlic paste and tomatoes one by one nicely
Add the marinated chicken and sauté nicely for 3 minutes
Add the chili and coriander powder
Add 2 to 3 cups of water (if gravy is thick water can be added latter also)
Put the salt needed (Remember 2 teaspoons of salt was added while marinating)
Mix everything well
Close the cooker and put the weight
Once the steam starts coming reduce the flame to medium
Cook for 8 to 10 minutes
Wait for the pressure to get released
Open the cooker and add the grinded paste
Let the gravy boil for 5 minutes
Now if the gravy is very thick than the consistency you need, water can be added
Check for the salt and hot taste and if any correction has to be made it can be done now
If you find the gravy too watery even after 5 to 8 minutes of boiling little coriander powder can be added

Chicken Cacciatore
Chicken Cacciatore

Serves 4
Ingredients:
1 chicken cut up and cleaned and pat dry
2 red bell peppers, sliced into one inch strips
1 package of mushrooms, sliced
½ cup red wine vinegar or dry white wine
1- 28 ounce can crushed Tomatoes
¼ cup parmesan cheese
1 onion, diced
4 cloves garlic, minced
2 cubes Dorat frozen basil or a handful fresh leaves
Italian seasoning, to taste
salt and pepper, to taste
oil, for frying
Directions:
In a wide shallow pan such as a chicken fryer, brown chicken in oil, set aside. Add onion, garlic, peppers and mushrooms and let cook until onion is translucent. Deglaze the pan with vinegar scraping up browned bits with a wooden spoon. When reduced add basil, Italian seasoning, salt and pepper, then and tomatoes, stir. If sauce is too thick, add water to thin in out. Add cheese. Let cook until chicken is tender, about 1 - 1 1/2 hours. Adjust seasoning to taste.
Serve with pasta, potatoes, rice or polenta.

Chicken Noodle Soup

Chicken Noodle Soup
2 cups chopped celery
2 cups chopped carrots
1 chopped onion
4tsp. chicken bouillon
*boil until tender in 4 cups of water*
Add: 2 cups of cream of chicken
2 cups cooked chicken ( i just go and buy a rotisserie chicken from the store and shred it- way easier
1 cup of half and half milk
1/2 package of wide noodles
Simmer 10-15 min
Enjoy for the winter season- this is super easy and our kids love this!!

The Grilled Spring Chicken with Blood Orange and Rosemary Polka Perfect for Weddings!
I knew it was only a matter a time before Id set a video recipe to the Chicken Dance. This spring and summer, millions of inebriated people will be joyously flapping their elbows, and bobbing their heads, to this tune at weddings all over the county. I have no problem with them, theyre drunk, what do you expect? Its the sober ones that go out there to "get their Mick Jagger on," I wonder about. They really should know better! Thats right, Im talking to you Tom and Katie (see photo below).Anyway, this video is a recipe for the game hen (aka Spring Chicken) I posted a picture of a few weeks ago. It was so delicious and beautiful I promised to film it the next time I made it, and I did. The key ingredient here is the erotic, exotic blood orange. Theyre Spanish in origin I believe, and add a wonderful sweet/tart flavor thats just perfect with the spicy chili sauce and aromatic rosemary.
I know what youre thinking, "this jerk just used another ingredient I cant buy where I live!" "So much for that $1,000 donation I was just about to send him…now Im sending it to Ralph Nader instead." Hey, I don’t blame you. Im sure its frustrating trying to find some of the stuff I use. Sometimes I even make up fake ingredients to mess with you. But, when it comes to the blood orange, there is a solution.Some dude named Jeff, suggested in a comment on the Game Recognize Game Hen post, that blood orange juice could be simulated with regular orange and a splash of pomegranate juice. Brilliant! In fact, it may be even better. Give this a try, and enjoy!

- Boneless chicken ½ kg cut in medium thick strips
- Corn flour 1 cup
- Salt 1 tsp
- Crushed red pepper 2 tsp
- Sesame seeds 2 tbsp
- Eggs 2
- Lemon juice 2 tbsp
- Chat masala to sprinkle
Method
- Marinate chicken with all above, do not add any water, mix very well, pick up chicken strips and deep fry till golden brown, sprinkle with chat masala. Serve immediately.

Ingredients
- Chicken breast ½ kg
- Ginger garlic paste 1 tbsp
- Soya sauce 1 tbsp
- Vinegar 2 tbsp
- Honey 4 tbsp
- White pepper ¼ tsp
- Black pepper ¼ tsp
- Salt to taste
- Olive oil 2 – 3 tbsp
- Worchester sauce 1 tbsp
- Red capsicum 1
- Wooden sticks as required
Method
- Cut ½ kg chicken breast into slices.Marinate chicken with 1 tbsp ginger garlic paste and salt to taste for 5 – 6 minutes.Now add 4 tbsp honey, 1 tbsp soya sauce, 2 tbsp vinegar, ¼ tsp white pepper, salt to taste and ¼ tsp black pepper. Keep it aside.
- Cut red capsicum into small cubes, now thread chicken pieces in wooden skewers altering with capsicum cubes. Heat oil in a grill pan, cook prepared stick from all the sides till golden brown, serve with boiled rice.

Ingredients:
- Chicken breast 2
- Finely chopped onion 1
- Finely chopped capsicum 1
- Boiled and chopped tomatoes 3
- Finely chopped coriander 2-3
- Garlic 2-3 cloves
- Ginger 1 medium sized piece
- Red chili powder 1 tsp
- Coriander powder 1 tsp
- Cumin powder 1 tsp
- Turmeric powder 1 tsp
- Whole cumin 1 tsp
- All spice powder ½ tsp
- Nutmeg and mace powder ½ tsp
- Oil 3-4 tbsp
- Salt to taste
Method:-
- Cut the breast fillet into cubes.Heat 3-4 tbsp of oil in a wok and fry the chopped ginger and 2-3 cloves of garlic until the color starts to change.Add 1finely chopped onion and 1tsp whole cumin seeds. Fry until the onions become translucent and change color.
- Add 1 finely chopped green and red capsicum along with the cubed chicken fillets and 3 boiled and chopped tomatoes. Fry for 2-3 minutes.Add 1tsp red chili powder,1tsp coriander powder,1tsp cumin powder,1tsp turmeric powder,1/2tsp all spice powder,1/2tsp nutmeg and mace powder, salt as required and finely chopped coriander leaves.
- Cover and simmer for 8-10 minutes.Dish out and serve with cumin flavored rice or boiled rice.

Andhra Pradesh is one of the state in south India, the hot issue in this region is fight for separate state "Telangana". Considering fight of separate Telangana fight in AP, some readers have commented asking me to post on the name of Telangana Chicken Curry not Andhra. So, I have decided to neither post on Andhra/ Telangana Ill just post Andhra pradesh chicken fry. Few days back when I posted Chicken curry with coconut milk, Ramya requested me the recipe of Andhra chicken fry. Thank you Ramya for asking this delicious recipe. Im a vegetarian but my hubby is big fan of chicken. Every time Ill make chicken curry for him, this time I remembered Ramyas request and made this delicious dry curry for him, he just enjoyed it. The sesame seeds add extra flavor to this dish. Coming to recipe.

Ingredients:
Chicken----------------1/2KG
Whole garam masala spices- clove2, cardamom-2, cinnamon stick-1 inch)
Garlic minced-2 cloves
Sesame seeds-1/2tbsp
2 large onions chopped
Coconut milk-2 tbsp
chopped cilantro (Coriander/ Kothimera)---1 small bunch(20 springs)- washed and chopped
Cumin seeds--------1tbspCumin powder------1tbsp
Coriander powder--1tbsp
Garam masala------1/4tbsp
Dry coconut powder--2tbsp
Turmeric------------1/4tbsp
Salt-----------------To taste

Procedure:
1. Take chicken cut it into medium size cubes by removing extra fat and wash it.
2. Take a pan heat it add oil. Add whole garam masala spices and saute till they are done.
3. Add cumin seeds, after they splutter add onions and little bit of salt which aids to cook onions faster.
4. After the onions are half cooked add gingergarlic paste and turmeric and cook it until raw flavor of garlic
5. Add chicken & garlic and cook it untill 80% done by stirring it in constant intervals. Do not cover with lid. Let the water that are naturally present in chicken evaporate.
6. Add sesame seeds (nuvvulu),red chilli powder, cumin powder, coriander powder,Coconut milk, salt, dry coconut powder, curd and garam masala. Mix well and cook it under medium flame.9. After the curry is cooked garnish with ciliantro and serve it...goes well with bagara/ plain rice/chapati.

Crock Pot Slow Cooker Chicken Biryani
You know the best item to purchase for kitchen during thanks giving is Crock pot, I got it just for $10 and now it is $29. Though I did not have any idea how to use it, I just got it to experiment. When I told about this slow cooker to my mom, she immediately told me to make this biryani. She also said that in good olden days they used to prepare this way. The process of cooking slow makes the masala flavors in the curry to slowly diffuse in to the rice and gives a very unique and delicious flavor.

Ingredeints
For marination:1 Kg or 2.2lb chicken(boneless or with bones)

- 4 tablespoons vegetable oil ( I prefer soybean oil)
- 2 large onions, chopped longitudinally and fried to golden brown with little oil.
- 2 tablespoon of gingergarlic paste
- 1 tablespoon minced fresh ginger
- 1 tablepoon chili powder(Depending on the heat you require, this gives mild heat)
- 1/2 teaspoon ground black pepper
- 1/2 tablespoon turmeric
- 1 tablespoon cumin powder
- 1 tablespoon coriander powder
- Salt to taste
- 2 tablespoons plain yogurt
- 1 cup chopped fresh mint leaves/pudina
- 1/2 cup coriander/ cilantro chopped
- 1 (2 inch) piece cinnamon stick
- 3 pounds boneless, skinless chicken pieces cut into chunks
- 4 pods cardamom
- 3 whole cloves
- 1 (1 inch) piece cinnamon stick
- 1 mace/Javithri
- Lemon juice-1 tbsp
- Vegetable oil-4tbsp
- For Rice:
- 3 cups(260ml) of Basmati rice
- 2 1/2 tablespoons vegetable oil
- Salt to taste
- water for cooking
Method:
- Cut the chicken in to medium size pieces, remove extra fat and wash it. Squeeze out all water in the chicken and take it in a bowl. Now add all the marinating ingredients mentioned above into the chicken and mix well. Keep this mixture in a refrigerator for about 30min to 24hrs. During marination all the juices and spices will enter into the inner portions of the meat and gives it a nice flavor. The longer you keep for the best the biryani tastes. So, you can marinate the day before you cook for better taste or else you can just marinate for 30min if you need to cook fast.
Wash and cook the rice till they are 70% done, by adding salt to taste vegetable oil. When the rice is ready, filter water and keep rice aside. Turn on the crock pot and set it to high, and arrange marinated chicken as a layer in the bottom and add rice on the top. On top of it, add fried onions, little pudina and coriander/cilantro and add some oil, and little color on top. Close witha lid and Cook under high flame for 3hrs and slow flame for 1hr. Check in between to see whether chicken is cooked properly. Also check before you serve and cook for few more minutes if it is not done. Serve hot with raita or sprinke little lemon juice.

Cutting Up a Chicken with Scissors Shear Genius
This video demo, of a chicken being broken down with kitchen shears, was down with the hopes that some of you will start buying fresh whole chickens, instead of previously frozen chicken parts.Everyones trying to save a few dollars at the store these days, and what better way than buying a whole chicken; always cheaper than the same amount of chicken parts. If you havent been buying organic, free-range chicken, because it costs more, this new skill will allow you to get a healthier whole bird for about the same price as the regular package of pieces.
Im assuming that most people have a bit more experience using a pair of scissors, than a razor-sharp boning knife. So, this method of butchering a chicken is much less intimidating for obvious reasons.
Hopefully for some, the scissors will act like training-wheels on the path to eventually using a knife for this procedure. Sturdy scissor do work nicely, but nothing can match a boning knife for maximum yield. Enjoy!

Creamy Blue Cheese Dressing – Chicken Wings Sold Separately
That’s right, a cheese grater and a wedge of frozen blue cheese is real the secret behind a perfect creamy blue cheese dressing. Not only is crumbling blue cheese a messy operation, but those larger chunks sink to the bottom, and don’t become one with sauce.
Using this technique produces a dressing exploding with the funky goodness of whichever blue-veined cheese you decide to use. I used a Maytag blue cheese, but any of the World’s great blues, like Roquefort or Stilton, will work beautifully. I hope you give this great method a try soon. Enjoy!

Ingredients
- Wheat (soaked overnight) ½ kg
- Chicken boneless ½ kg
- Turmeric ½ tsp
- Ginger garlic 2 tbsp
- Green chilies grinded 1 tbsp
- Black pepper 1 tsp
- Salt 1 tbsp
- Tomatoes blended 3
For baghar
- Oil ½ cup
- Mint chopped 1 bunch
- Ginger finely sliced 2 tbsp
- Green chilies chopped 6
- Brown onion ¼ cup
- All spice 1 tsp heaped
Method
- Soak ½ kg wheat over night, boiled in 12 cups of water and ½ tsp of turmeric till tender, cool and blend, boil ½ kg boneless chicken with 2 tbsp of ginger garlic paste, 1 tsp black pepper, 1 tbsp salt, 1 tbsp grinded green chilies and 4 cups of water till chicken tender, then chopperize chicken, in your blended wheat add the chopperize chicken with blended and sieved tomato mixture, mix all well and cook till boiling, lastly heat ½ cup oil and add to the shorba with 1 bunch chopped mint leaves, 1 tsp all spice, 2 tbsp ginger Julian, 6 chopped green chilies and salt to taste, mix well and serve hot.

Tomato Capsicum Bath with Chicken Broth in Rice cooker
I am really addicted to the Mexican recipes these days. Few days back I tried Mexican rice and they turned awesome, now I just tried the same recipe in Indian style. From past month I have been making one pot meals for my hubbys lunch box, which are very simple and delicious recipes. Similarly, I tried this today, and just now I got a phone call my hubby telling that the rice is fantastic!!! This is the best compliment that I have ever heard from my hubby, he is a bit inexpressive tells about the recipes unless you ask him!! But today to my surprise he called and told me about it!!!:) Now stories apart coming to the recipe..

Ingredients
Long Grain rice(Available in all most all grocery stores)- 3cups
Water-2cups

Method:
Wash rice and add chicken broth, water and salt (remember chicken broth already contains salt so better be careful). Now take a skillet and add butter/olive oil and heat it. Add cumin seeds, mustard seeds and allow them to splatter. Then add cardamom, cinnamon, cloves and bay leaf, saute under medium flame. Then add onion, green chili and cook till the onion turn tender. Then add capsicum and green peas, saute for 1min(Do not over cook capsicum as they will cook well along with rice). Finally add tomato puree, pudina powder, coriander and cook till the raw flavor of tomato goes away. Shift this mixture in to the rice bowl and cook like you cook normal rice.
Finally you can squeeze some lemon juice on the top, if you like tangy flavor. You can also add garlic in the seasoning if you wish.

Chicken Braciolettini with Mushroom and Wine Sauce

and I only made some minor changes. I used two cloves of garlic instead of one, I used chicken cutlets instead of breasts, used half the amount of butter, and used a little less Romano cheese than called for. Since I used cutlets the chicken wasnt as big so I didnt think I needed that much cheese. Next time Ill use half the amount of wine because it was really strong and I had to dilute it with chicken stock. Thats why its always very important to taste as you go along and you cant hold a recipe to timing and amounts. Using a different size pot or pan could change the cooking time, using a different brand of stock or wine could change the flavor as well.Chicken Braciolettini with Mushroom and Wine Sauce

Serves 6 (If using small chicken cutlets like I did, youll want to serve two per person)
Ingredients:
6 large boneless chicken breasts
1 large garlic clove
freshly ground black pepper
1/4 cup freshly grated Parmesan or Romano cheese
1/4 pound shredded mozzarella or fontina cheese
1/4 bunch fresh parsley, chopped (reserve 1 tablespoon for garnish)
6 thin slices prosciutto or ham
1 stick (1/2 cup butter)
1/4 cup oil
1 cup Madeira or Marsala wine
1/2 pound whole button mushrooms or thinly sliced large mushrooms
Directions:
1. Have butcher pound the meat slightly to break the tendons, or use the flat side of a heavy meat cleaver to do so yourself.
2. Lay the flat pieces of chicken on a smooth clean surface. Using a garlic press, squeeze the garlic clove. With your fingertips, transwer these particles to the cutlet pieces. Sprinkle black pepper, grated cheese, shredded cheese, and parsley all over the chicken. Cover each breast with a slice of prosciutto or ham. Roll each breast jelly-roll style, carefully tucking in all loose ends. Secure with toothpicks (use the same number for each breast).

3. Heat the oil and the butter in a large skillet over medium heat. Add the chicken breasts and brown well all over. With a slotted spoon, transfer the chicken to a baking pan. Bake for 20 minutes in a preheated 350 degree oven or until the chicken is cooked moist-tender.
4. To make sauce, drain the fat from the skillet and return unwashed pan to stove an medium heat, scraping all browned bits from bottom of pan with a wooden spoon.
5. Raise the heat to high and pour in the wine, stirring well. Add the mushrooms and cook 1 more minute, shaking skillet. If the sauce appears to thin, sprkinkle with some flour and cook, stirring well until reaches your desired thickness. If more sauce is desired, add some chicken broth and more wine.
6. Remove the chicken from the oven, carefully remove all toothpicks, and transfer to a warm serving platter. Pour the hot sauce on top. Sprinkle with the reserved tablespoon of chopped parsley. To serve cut meat in thick slices and coat with sauce and mushrooms.
Authors Note: If using small pieces of chicken breasts, it will not be necessary to bake the chicken. Simple cook in skillet as directed, transfer to a warm platter, and prepare sauce.
My Note: If using chicken cutlets, make sauce then add rolls back to sauce, toss to coat. Put cover on and allow to cook for approx 10 minutes (depending on thickness of chicken) to cook chicken through.
I didnt slice the chicken since they were small but served two over a bed of risotto topped with the mushroom sauce.

Chicken Pot Pie
I know the picture doesnt do this justice - trust me, its delicious!
The recipe here is for a traditional 9" pie dish, but you can easily double it and bake it in a 9x13 baking dish, as my friend did when she brought it to us. Our family was able to eat it for TWO nights (what a friend!), so if you have a large family or group, that should work great!
Chicken Pot Pie
Filling:
6 T. butter, divided
1 1/4 c. onion, diced, divided
1 c. carrots, diced
1 c. celery, diced
3/4 c. frozen peas
1/4 c. flour
2 c. chicken broth
2 c. cooked chicken, diced or shredded
1/4 tsp. celery salt
1 tsp. salt, plus more to taste
1/2 tsp. pepper, plus more to taste
Crust:
1 1/4 c. all-purpose or whole white wheat flour
1/4 tsp. salt
8 T. (1/2 cup) cold salted butter, diced
up to 1/4 c. ice water
For the crust: combine flour and salt in mixing bowl or food processor. Add butter and pulse a few times if using a food processor, or blend into the flour with a pastry blender, fork and knife, or your hands until well-distributed. Butter should be pea-sized or smaller. Slowly drizzle in the ice water, tossing with your hands or pulsing in the processor until the dough starts to come together easily without crumbling. Gather into a ball, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.
For the filling: Preheat oven to 350 degrees. In a large skillet, melt 2 T. butter over medium high heat. Add 1 cup onion, along with the carrots and celery, and cook, stirring often, until soft, about 5-7 minutes. Add peas, and stir until warmed through. Season with celery salt, 1/2 tsp. salt and 1/4 tsp. pepper. Remove vegetables to a plate and set aside.
Add remaining 4 T. butter to skillet. Add remaining 1/4 c. onion and cook for about 3 minutes, until slightly softened. Add flour, stirring constantly for about 1 minute. Whisk in the chicken broth slowly. Continue to cook, stirring constantly, until thickened, about 5-7 minutes. Season with salt and pepper, to taste (start with about 1/4 tsp. of each).
Remove from the heat and add the vegetables back into the skillet along with the cooked chicken. Stir until well-coated. Transfer to a pie dish or an 8x8 baking dish.
Remove pie crust from the refrigerator and place on a floured surface. Roll out the dough until large enough to fit the top of your pan. Roll up with your rolling pin, and unroll over the filling in the pie dish. Trim, tuck, and crimp the edges. Cut a few slits in the crust to allow air to escape.
Bake at 350 degrees for about 30-35 minutes, until top is golden brown and filling is bubbling. Remove from the oven and let cool about 5 minutes before serving.

Chettinad Chicken The Authentic Chettinad Chicken Recipe
It is needless to mention the specialty of this item in chettinad cusine.The mouth watering taste of this dish is known all over the world .All non vegetarians in Asia for sure would have tasted this at least once. There are hundreds of recipes for chettinad chicken on the net written by almost all food bloggers. Though many of them are similar to the original one. I have tried to find out the original recipe from my mother and grand mother and has presented the authentic chettinad recipe. For the authentic taste, the masala has to be grinded in the hand grinder. But these days it is rather impossible and hence has to be satisfied with the taste of the masala made in the mixie
Ingredients
Chicken-750 gms
Small onion 30 or big onion 2
Tomatoes-2
Garlic 20 pods

To grind No1
Ginger ½ inch piece
Small onion-10
Garlic-10 pods
Green chillies-2
Chillie powder-1 table spoons
Coriander powder-2 table spoons
To grind No2
Coconut grated-5 table spoons
Cashew nut-5 or kasa kasa-2 teaspoons
Fennel seeds-1 teaspoon
To season
Cinnamon-2 pieces
Fennel seeds-1 teaspoon
Clove-2
Cardamom-2
Birinji leaf-little
Mint leaf-handful
Curry leaf little
Traditionally chicken is not marinated before cooking in Chettinad chicken.As they used to cook in low fire for a long time in olden days the chicken will get the salt and hot taste once it gets cooked. These days the chicken we use is tender and gets cooked fast in gas stove. So I feel it is better to marinate the chicken for an hour before cooking. If you do not find time to marinate, then no problem.
To marinate
1 teaspoon kuzhambu milagai thool(the powder used for sambar)
Salt-1 teaspoon
Curd little
Ginger garlic paste-1 teaspoon
Procedure
Mince the onion, garlic and tomatoes.
Keep the kadai in the stove. Season the curry with the items given in ‘to season’ in 2 tablespoons of oil.
Add the onions and saute with a pinch of salt for 3 minutes.
When the onions turn transparent add the garlic, sauté for some time
Add the chopped tomatoes. Sauté till the whole thing gets smashed.
Add the grinded paste of items given in No 1. Sauté it for a while.
Now add the chicken pieces and nicely mix all the masala over the chicken pieces.
You can see lot of water coming out of the chicken. Reduce the flame and cook for 10 to 15 minutes.
Once you find that the chicken pieces are almost cooked increase the flame so that the gravy becomes thick.
Once the curry gets thick add the masala grinded with the items given in No2 and mix nicely
Cook for another 5 minutes.
If you need the curry to be little watery add the masala little earlier and switch off when the curry is in the desired consistency.
The curry should be cooked till the oil seperates

Salsa Verde Chicken Tacos with Chunky Chipotle Salsa
My apologies for the poor quality of the photo and the messy plate but, oops!, I almost forgot to take my nightly photo. Just as I was about to dive into numero dos, I remembered and had to scramble to tidy my plate a bit and try to eeek out an acceptable image. Thats how good they were! I was so raptured by their deliciousness that everything else melted from my mind.
To prepare the salsa verde I cleaned and halved about 6 fresh tomatillos and placed them in a food processor. To the tomatillos I added 2 cloves of garlic, 1 fresh serrano chili, 1/2 onion, a bunch of fresh cilantro, the juice of a lime and plenty of salt and pepper. I pureed the mixture in the food processor and pour it in a preheated skillet with about 2 tablespoons of canola oil. The salsa verde simmered for about 15-20 minutes until it turned a deep green color and thickened to the perfect consistency.
I took some help from the store and shredded the breast meat from a Sams rotisserie chicken and placed it in the salsa verde. Stir to combine well, taste to check for seasonings and let simmer very slow for about 15 minutes just until the flavors combine.
Spoon the chicken filling into freshly warmed corn tortillas and top with sliced avocado, shredded cheese and a good spoonful of chunky chipotle salsa. If you would like the recipe for the chunky chipotle salsa (which might be the best salsa ever!) please refer back to my dinner entry dated April 7. That is one tasty taco!
