Crock Pot Slow Cooker Chicken Biryani

You know the best item to purchase for kitchen during thanks giving is Crock pot, I got it just for $10 and now it is $29. Though I did not have any idea how to use it, I just got it to experiment. When I told about this slow cooker to my mom, she immediately told me to make this biryani. She also said that in good olden days they used to prepare this way. The process of cooking slow makes the masala flavors in the curry to slowly diffuse in to the rice and gives a very unique and delicious flavor.

Ingredeints
For marination:1 Kg or 2.2lb chicken(boneless or with bones)
  • 4 tablespoons vegetable oil ( I prefer soybean oil)
  • 2 large onions, chopped longitudinally and fried to golden brown with little oil.
  • 2 tablespoon of gingergarlic paste
  • 1 tablespoon minced fresh ginger
  • 1 tablepoon chili powder(Depending on the heat you require, this gives mild heat)
  • 1/2 teaspoon ground black pepper
  • 1/2 tablespoon turmeric
  • 1 tablespoon cumin powder
  • 1 tablespoon coriander powder
  • Salt to taste
  • 2 tablespoons plain yogurt
  • 1 cup chopped fresh mint leaves/pudina
  • 1/2 cup coriander/ cilantro chopped
  • 1 (2 inch) piece cinnamon stick
  • 3 pounds boneless, skinless chicken pieces cut into chunks
    • 4 pods cardamom
    • 3 whole cloves
    • 1 (1 inch) piece cinnamon stick
    • 1 mace/Javithri
    2 large bay leaves 1 table spoon salt 1/4 table spoon black cumin seeds( optional)
    Lemon juice-1 tbsp
    Vegetable oil-4tbsp
  • For Rice:
  • 3 cups(260ml) of Basmati rice
  • 2 1/2 tablespoons vegetable oil
  • Salt to taste
  • water for cooking


    Method:
    Cut the chicken in to medium size pieces, remove extra fat and wash it. Squeeze out all water in the chicken and take it in a bowl. Now add all the marinating ingredients mentioned above into the chicken and mix well. Keep this mixture in a refrigerator for about 30min to 24hrs. During marination all the juices and spices will enter into the inner portions of the meat and gives it a nice flavor. The longer you keep for the best the biryani tastes. So, you can marinate the day before you cook for better taste or else you can just marinate for 30min if you need to cook fast.

    Wash and cook the rice till they are 70% done, by adding salt to taste vegetable oil. When the rice is ready, filter water and keep rice aside. Turn on the crock pot and set it to high, and arrange marinated chicken as a layer in the bottom and add rice on the top. On top of it, add fried onions, little pudina and coriander/cilantro and add some oil, and little color on top. Close witha lid and Cook under high flame for 3hrs and slow flame for 1hr. Check in between to see whether chicken is cooked properly. Also check before you serve and cook for few more minutes if it is not done. Serve hot with raita or sprinke little lemon juice.

Italian beef crock pot

Heres a yummy recipe for sandwiches:


ITALIAN BEEF, CROCK POT

3 lb. chuck or rump roast -- trimmed of fat
1 package Good Seasons Italian salad dressing mix
2 teaspoons Italian seasoning
1/2 jar pepperoni peppers -- (half of a 16 oz jar, including juice)
1 can beef broth -- -or more if needed
ground pepper -- garlic powder, etc.
-- optional
favorite cheese
kaiser buns

Mix all ingredients together in a slow cooker or crock pot. Cook all day on low (or #3 in a slow cooker).

When meat is done, shred it and put back in its juices.

Serve on warm kaiser buns (toast if desired). Top with favorite cheese--cheddar, Colby/jack, mozzarella/cheddar, etc. Warm in the microwave if cheese needs to be melted. Can also top with sauteed onions, green peppers, and mushrooms if desired.

NOTES : This is a very forgiving recipe. If roast is large add another pkg. of Italian salad dressing mix and more beef broth. Using more broth will leave you with more juices to dip your sandwich in. You can use less peppers, too.

Chicken Pot Pie


I know the picture doesnt do this justice - trust me, its delicious!

 Chicken Pot Pie - comfort food at its finest.  I never was a huge fan of chicken pot pie as a kid, but shortly after I had my 3rd baby, my dear friend Amber offered to bring me dinner and what did she bring?  Chicken Pot Pie - and it blew me away, it was so delicious.  And it wasnt just because I was in the post-baby fog!  The crust is buttery and flaky, and the filling is hearty and delicious - chicken and vegetables all swimming in a smooth flavorful sauce.  This is a great way to use chicken you have cooked previously and your own homemade stock!  You can play around with the vegetables too - Amber added about a cup of finely chopped broccoli, which I didnt have the day I made it, but I loved it in there.  I think mushrooms would make a delicious addition as well, or you can keep it exactly as written and you wont go wrong!  Let me know what you try!

The recipe here is for a traditional 9" pie dish, but you can easily double it and bake it in a 9x13 baking dish, as my friend did when she brought it to us.  Our family was able to eat it for TWO nights (what a friend!), so if you have a large family or group, that should work great!

Chicken Pot Pie

Filling:
6 T. butter, divided
1 1/4 c. onion, diced, divided
1 c. carrots, diced
1 c. celery, diced
3/4 c. frozen peas
1/4 c. flour
2 c. chicken broth
2 c. cooked chicken, diced or shredded
1/4 tsp. celery salt
1 tsp. salt, plus more to taste
1/2 tsp. pepper, plus more to taste

Crust:
1 1/4 c. all-purpose or whole white wheat flour
1/4 tsp. salt
8 T. (1/2 cup) cold salted butter, diced
up to 1/4 c. ice water

For the crust: combine flour and salt in mixing bowl or food processor.  Add butter and pulse a few times if using a food processor, or blend into the flour with a pastry blender, fork and knife, or your hands until well-distributed.  Butter should be pea-sized or smaller.  Slowly drizzle in the ice water, tossing with your hands or pulsing in the processor until the dough starts to come together easily without crumbling.  Gather into a ball, wrap in plastic wrap, and chill in the refrigerator for 30 minutes.

For the filling: Preheat oven to 350 degrees.  In a large skillet, melt 2 T. butter over medium high heat.  Add 1 cup onion, along with the carrots and celery, and cook, stirring often, until soft, about 5-7 minutes.  Add peas, and stir until warmed through.  Season with celery salt, 1/2 tsp. salt and 1/4 tsp. pepper.  Remove vegetables to a plate and set aside.

Add remaining 4 T. butter to skillet.  Add remaining 1/4 c. onion and cook for about 3 minutes, until slightly softened.  Add flour, stirring constantly for about 1 minute. Whisk in the chicken broth slowly.  Continue to cook, stirring constantly, until thickened, about 5-7 minutes.  Season with salt and pepper, to taste (start with about 1/4 tsp. of each).

Remove from the heat and add the vegetables back into the skillet along with the cooked chicken.  Stir until well-coated.  Transfer to a pie dish or an 8x8 baking dish.

Remove pie crust from the refrigerator and place on a floured surface.  Roll out the dough until large enough to fit the top of your pan.  Roll up with your rolling pin, and unroll over the filling in the pie dish.  Trim, tuck, and crimp the edges.  Cut a few slits in the crust to allow air to escape.

Bake at 350 degrees for about 30-35 minutes, until top is golden brown and filling is bubbling.  Remove from the oven and let cool about 5 minutes before serving.

One Pot Lambs Liver Recipe


Traditionally in the UK we cook lambs liver in a gravy with onions and mushrooms and serve it with mashed potatoes, sometimes with vegetables like peas on the side.

Eating lambs liver in gravy with potatoes is very tasty, however after eating Chefs one pot lambs liver recipe you will have a new way of cooking liver on your menu because I guarantee that the taste is amazing.

Unlike some other meats, when lambs liver is cooked and stewed it flavours the liquid in such a fabulous way that you do not need to add stocks or other flavouring to it, just vegetables and salt are fine.

Chef uses corn spaghetti in this recipe as the texture and flavour is slightly different than using wheat spaghetti, this lambs liver recipe is gluten free.

Lambs liver is packed with B Vitamins including Vitamin B12 and Iron.
Chef uses pak choi but any type of cabbage leaves will work in this tantalizing dish.

This one pot lambs liver recipe is packed with flavour, every single ingredient compliments the dish so very well, the textures are fantastic.





Ingredients for Jeenas Kitchen lambs liver recipe

1 Pack Lambs Liver
Handful Corn spaghetti (broken in half)
Bunch Pak choi (stalks cut into strips, leaves sliced)
1-2 Carrots (strips)
1 Onion (sliced)
1 Large flat mushroom (halved, sliced)
1-2 Garlic cloves (crushed)
1 Cup of water
Salt to taste

How to cook lambs liver recipe with pasta


Take a large pan and gently fry the carrots and onions for a few minutes.



Add the liver.

Stir often and brown the lambs liver.



Add the garlic, stir well.




Add the cup of water.

Bring to the boil and simmer for 5-10 minutes.



Add the pak choi stalks.

If the liver pieces are too big chop at them with your spatula and they will break easily.



Add mushrooms and corn spaghetti.

Chop at the corn spaghetti using a spatula and a fork to prevent sticking.



Keep simmering until the liver and corn spaghetti are cooked.



A few minutes before your lambs liver is cooked add the pak choi leaves and season with salt.



Your delicious and healthy lambs liver recipe is now ready to serve.
