Crispy Chicken Sour Sour Style

Crispy Chicken Sour & Sour Style



Ingredients
  • Chicken boneless ½ kg
  • Salt to taste
  • Black pepper ¼ tsp
  • Ginger garlic paste 1 tbsp
  • White vinegar 1 tbsp
  • Egg 1
  • Flour 3 tbsp
  • Corn flour 2 tbsp
  • Oil for fry
  • Ingredients for Sauce
  • Oil 2 tbsp
  • Spring onion chopped 1
  • Garlic chopped 2 cloves
  • Green chilies chopped 2
  • Ginger chopped 1 piece
  • Chicken stock 1 cup
  • White vinegar 3 tbsp
  • Soya sauce 1 tbsp
  • Worchester shire sauce 1 tbsp
  • Salt to taste
  • Sugar 2 tbsp
  • Tomato ketchup 3 tbsp
  • Corn flour 1 tbsp
Method
  • Cut ½ kg chicken into strips, marinate with salt to taste, ¼ tsp black pepper, 1 tbsp ginger garlic paste, 1 tbsp vinegar, 1 egg, 3 tbsp flour and 2 tbsp corn flour. Deep fry till golden brown. Remove from pan and keep aside.
  • In a pan heat 2 tbsp oil, add 1 piece of chopped ginger, 2 cloves of chopped garlic and 2 chopped green chilies. Fry well till golden brown.
  • Now add 1 chopped spring onion, 1 cup chicken stock, 3 tbsp white vinegar, 1 tbsp soya sauce, 1 tbsp Worchester shire sauce, salt to taste, 2 tbsp sugar and 3 tbsp tomato ketchup.
  • Cook till it comes to a boil. Thicken sauce with 1 tbsp corn flour paste. Now add fried chicken and mix for few seconds.Dish it out and serve hot.

Crispy Salmon Cakes with Creamy Lemon Herb Dipping Sauce

If that title doesnt grab you right there, I dont know what will!  Ive been making salmon cakes about once a month for the last 6 months or so and I usually just do my own thing and make some kind of tartar sauce to go along with them.  Theyre always tasty and we always enjoy them, but of course I found a recipe in my new book that just takes them to the next level!  The panko bread crumbs make them light and crisp on the outside and the flavors are amazing on the inside.  The dipping sauce is superb and we found ourselves dipping our oven fries into it as well.  These are a winner!  I hope you enjoy them.


Note: Almost every time Ive made salmon cakes, Ive used canned salmon because lets face, my husband is in grad school and we are on a low budget.  The original recipe calls for a 1 1/4 lb. skinless salmon fillet, cut into 1-inch pieces.  Since Ive never made it that way, I put canned salmon in the recipe, but Im confident these would taste far superior following the recipe and using fresh.  So do what you want!  If you too are low on funds, use canned and I promise they are still totally delicious!  Also, if using the canned salmon, add 1 egg to help them stay together.  They still taste great without it, but youll have a lot more trouble keeping them together.

Also remember to whip up your sauce before you start your salmon cakes since it needs to chill for 30 minutes.  Enjoy!

Crispy Salmon Cakes
Serves 4 (makes 8 cakes)

3 T. plus 3/4 c. panko bread crumbs
1 scallion, sliced thin
1 shallot, minced
2 T. minced fresh parsley
2 T. mayonnaise
4 tsp. lemon juice
1 tsp. Dijon mustard
3/4 tsp. salt
1/4 tsp. pepper
pinch cayenne pepper
20 oz. canned salmon (or fresh - see note)
1 egg (optional, only if using canned salmon instead of fresh)
1/2 cup vegetable oil
1 recipe Creamy Lemon-Herb Dipping sauce (recipe below)

Line plate with paper towels and set aside.  Combine 3 T. panko, scallion, shallot parsley, mayonnaise, lemon juice, mustard, egg (if using), salt, pepper, and cayenne in bowl.  (If using fresh salmon - pulse in food processor in 3 batches until coarsely chopped into 1/4-inch pieces).  Add salmon to bowl with panko mixture.  Gently mix until uniformly combined.

Place remaining 3/4 cup panko in shallow baking dish or pie plate.  Using 1/3-cup measure, scoop level amount of salmon mixture and transfer to baking sheet; repeat to make 8 cakes.  Carefully coat each cake in bread crumbs, gently patting cake into disk measuring 2 3/4 inches in diameter and 1 inch high.  Return coated cakes to baking sheet.

Heat oil in 12-inch skillet over medium-high heat until shimmering.  Place cakes in skillet and cook, without moving, until golden brown, about 2 minutes.  Carefully flip cakes and cook until second side is golden brown, 2-3 minutes.  Transfer cakes to prepared plate to drain for 1 minute.  Serve with lemon wedges or sauce.

Creamy Lemon-Herb Dipping Sauce
Makes about 1/2 cup

1/2 cup mayonnaise
2 T. plus 1 1/2 tsp. lemon juice
1 T. minced fresh parsley (or 1/2 T. dried)
1 T. minced fresh thyme (or 1/2 T. dried)
1 scallion, minces
1/2 tsp. salt
Pepper

Mix all ingredients in a small bowl and season with pepper to taste.  Cover and chill until flavors blend, at least 30 minutes.

Nans Slow Cooker Pulled Pork Sandwiches with Crispy Cole Slaw


If last night was Sunday, which it was, than it must be dinner at Nans house! Most Sunday night dinners I enjoy anyway, but, to be sure, our dinner selection is most always one of my brothers favorites. However, last night was my lucky night. I was treated to Nans famous pulled pork sandwiches which she expertly paired with the vinegary bite of her crispy Marinated Slaw. Fortunately for everyone, though potentially intimidating, the large cut of pork is surprisingly simple to prepare and the bonus....the leftovers are even better!

Nan used a 4 lb. boston butt which she coated liberally with Famous Daves Pork Rub. The pork was placed on a bed of sliced onions in the crock pot set to low. It order to achieve the desired tenderness and succulence, it was left to cook for 8 hours. After allowing the pork to rest on the warming setting for two hours, Nan shredded the pork and stored it in the refrigerator without any BBQ sauce until it was time for dinner. While my brother prefers his pork mixed into the BBQ sauce, Nan and I prefer just a drizzle of sauce over the top.

Nans choice of sauces is one she makes from the Deen Brothers Cookbook. It is one of the tastiest BBQ sauces and is very easy to make. In a large bowl, combine the following: 1 cup ketchup, 1/4 cup packed dark brown sugar, 2 tablespoons orange juice, 1 teaspoon Worcestershire sauce, 1teaspoon liquid smoke, 1/2 teaspoon dry mustard powder, and 1/4 teaspoon cayenne pepper.

At dinner time, she gently reheated the pork in the microwave which prevented it from getting too dry. The BBQ sauce does not require cooking, but since it was going to be slathered on our sandwiches, we wanted it hot, so Nan heated it over low heat in a sauce pan until it bubbled. The juicy pork was placed on the warm, toasty buns, with topped with a dollop of BBQ sauce and, because most everything I eat needs a kick of hot pepper, several jalapeno rings. Some in our group prefer the slaw on top of the pork, however, I do not like the juiciness to make my bun soggy so I eat it on the side.

Nans marinated slaw is the perfect cold, crunchy bite to balance out the richness of the pork. She combines two bags of cole slaw and 1 thinly sliced large onion in a very large bowl. Pour in the dressing which combines 1/2 cup canola oil, 1/2 cup cider vinegar, 3/4 cup sugar, 1/2 teaspoon dry mustard, 1/4 teaspoon black pepper, 1 teaspoon salt, 2 tablespoons chopped parsley and 1/2 teaspoon celery seed and combine well. It is best to make this cole slaw the night before so there is sufficient time for the flavors to combine. Serve cold.

crispy kakarikaya karela bitter gourd fry

Krrrispy!!!!!yummy karela is a very unique veggitable, some hate this for its bitter taste and some love it for the same taste. Ill fall in the second category. When I was in school I just hated its texture and taste, later my teacher told in a class about the health benefits of this vegge, from them I started having it. Now I like this a lot (of course I love all vegetables, this is my fav). I like every recipe made out of it, bajji/fry/curry/stuffed one. Just remember one thing to have a healthy food, "Bitter is healthy" (except poison! just kidding).


Ingredients:
Bitter gourd- De-seeded (you can keep seeds if you wish), sliced like a discs-4cups
Pea nut/palli powder-2ts
Chopped onions-1/4cup
Green chillies-2
chopped cilantro-2t.s
dry coconut powder -2ts
Coriander powder-1/2ts
cumin powder-1/4ts
Garlic cloves-2
Cumin seeds-1/2ts
Mustard seeds-1/2ts
Chana dal-1ts
Turmeric-Pinch
Roasted sesame seeds-1ts
Salt to taste
Chili powder-1/2t.s
Red chili-1
vegetable oil-2ts
Directions:
First take the bitter gourd pieces and marinate them with little salt and turmeric. Refrigerate this mixture for 10-20min.Heat 2ts of oil in a non stick pan and add cumin seeds + mustard seeds+ red chili + chana dal and wait until they splutter. Add onions and fry them till they are well cooked under medium flame. Now, add refrigerated bitter gourd pieces and fry them till they turn crispy. Now take coconut powder+cumin powder+coriander powder+ galic cloves+salt+red chili powder pea nut powder+ roasted sesame seeds in a mixie jar and just give a gentle stir so that all powders get well mixed. add this complete mixture to the pieces and fry for few more minutes under medium flame. Now the crispy spicy bitter gourd fry is ready to serve.
