Peel chop and boil the potatoes until soft.

Do not add salt to the water or any other ingredients.

Once cooked push the potatoes through a sieve to mash - do not add butter or any salt leave the potatoes plain.

Boil the carrots until soft, add sweetcorn cook for a few minutes or until defrosted in the water.

If using canned sweetcorn do not add to the carrots.

Fry the onions until they start to slightly soften.

Add the chilli and red peppers, keep frying gently.

Add the cumin and a little salt and black pepper, stir well.

Add the garlic paste, stir well.

Cook for five more minutes stiring constantly then switch off the heat.

Drain the carrots and leave to slightly cool.

Tip the carrots into a clean tea towel and very gently use your hands to remove any excess water from the carrots.

If you are using canned sweetcorn do the same with the sweetcorn to remove excess water.

Do not squeeze hard as the carrot need to keep the shape not mush.

Do the same with the beans then roughly chop at the beans - mainly the larger beans such as kidney beans, borlotti, pinto or cannelli.

The mashed potato should be gluey in texture - this is because of there has been no butter, salt or other ingredients added to it.

Add the chopped beans and onion mixture to the potatoes, add some salt to taste mix well.

Add the sweetcorn and carrots mix gently.

Grind the cornflakes to a fine powder with a pinch of salt.

Place a cooking ring on top of some cornflake powder.

Fill the cooking ring with vegetarian burger mixture.

Cover the burgers with cornflakes powder and pat some cornflakes up the sides of the burgers.

Lightly fry the veggie burger on one side for a few minutes.

Turn over the burger and cook for a few more minutes.

Vegetarian Polenta Pie

Layered polenta, veggies and vegan cheese.

An easier savory vegetarian pie than this you won't find. It's a simple fresh recipe that rocks. I made it to celebrate.

We just got back from my three-month post-op check-up. The hip looks good. "I gained ten pounds," I said to my hunky surgeon, Brant, as he was lifting my left leg in the air and poking me in the pelvis.

"So what?" he snorted and turned to Steve. "These tall skinny chicks. Ten pounds."

"I thought you'd be proud of me," I countered. "You know- that whole, You fit the broken hip profile thing you said to me? Female. White. Skinny. Vegetarian. (Celiac!)"

"Yeah, well. I gotta give you shit about something," he said.

Vegetarian Puttanesca for Two

Easy pasta putanesca- gluten-free with rice spaghetti.

Oh, you paint, too? is the faint, flat interest we get, we artist's wives who paint. Inevitably followed by, Isn't that difficult? In fact, I assure them, it couldn't be easier. (Try being married to a real estate agent who sprays Sun-In in his hair, I want to say, but don't.)

The scene is my husband's art opening and I play my role with decorum, clutching my plastic cup of Australian Chardonnay.

Do you compete? Darling, this question says a lot more about you than than me. No, I always answer, trying not to audibly sigh. We mutually admire. Then comes the big one. The favorite question.

Does he influence your work? (The subtext being, of course, he is the man, after all.)

I influence his, I answer, slugging down the last warm drop of wine. They will smile their awkward smile at this and wobble toward the grapes and brie. The word tedious comes to mind.

I catch my husband looking at me through the peanut nibbling crowd. He raises an ironic eyebrow. I laugh. A sparkled perfumed woman leans in to him for a kiss on the cheek. He is polite. I will tell him later he smells like Bloomingdale’s.

At home he will make me an ice cold vodka martini. We will kick off our shoes and eat spaghetti to Chet Baker. So what's on your agenda for tomorrow? he will ask. Maybe painting, I will say with a yawn. Or blogging. I'm not just an Artist's Wife, you know.

Nope, he always says. You're the cutest girl ever.

Yeah, I remind him, You're lucky I'm a new-school feminist.

Ingredients

1 Cup Mung Beans
1 Large Onion (diced small)
2 Garlic Cloves (crushed)
2 Inch Fresh Ginger (grated/crushed)
1 Large Carrot (grated through fine holes, squeeze out excess water with hands)
Rapeseed or Olive Oil
1 Level Tbsp Buckwheat Flour

For the Spices

1 tsp Cumin Powder
1 tsp Garam Masala
1 + 1/2 tsp Coriander Powder
1/2 tsp Turmeric
1/4 tsp Ginger Powder
Salt + Pepper
3 Drops Hot Tabasco Sauce or 1/4 tsp Chilli Powder
Salt + Black Pepper
Large Pinch Dried Coriander

note....If you do not have a pressure cooker you must always soak your beans over night then boil till they become soft.

How to make a vegetarian vegan meat free seekh kebab recipe

Place the mung beans into a bowl and cover with hot water, approximately one inch above the beans, leave to soak for 1 - 2 hours.

Once soaked rinse the beans with fresh water - place into a pressure cooker and fill the cooker with water no more than one inch above the beans.

Place the pressure cooker lid on properly and bring to the boil (full pressure) now turn the heat to the lowest setting and cook for 10 minutes only.

Place the pressure cooker under the cold water tap and remove the pan lid.

Drain the water off the mung beans and place back into the pan, put to the side to cool a little while you get on with cooking the onions for the vegetarian kebab.

Take a small frying pan drizzle with oil and cook the onions on a medium heat until they start to soften up, you do not want to brown them.

Once the onions start to soften add the fresh ginger and garlic, stir well.

Cook for a minute or so then add the spices stir well again.

If you are using chilli powder then add it here with the rest of the spices.

Some more oil may need to be added here if the onions look too dry with the spices, just loosen them a little with oil.

Take the pan off the heat.

Place the mung beans into a bowl and sprinkle with salt and pepper, mash the mung beans with a potato masher.

Place the grated carrot into the mung bean mash, mix well.

Add the spiced onions into the mung bean mixture with 3 drops of hot Tabasco sauce (optional) and stir well.

Add the dried coriander leaves into the mung bean mixture with a drizzle of approx 1 tsp olive oil, stir well.

Add the level tablespoon of buckwheat flour and stir well again.

Drizzle oil onto a large baking tray.

Divide vegetarian kebab mixture into four, one at a time mould the mung bean mixture around the skewer and place onto the baking tray.

It will be soft and sticky but dont worry it is suposed to be this way.

If it helps mould it into a sausage shape on the actual baking tray around the skewer.

Place into a hot oven at 220C on the middle shelf.

Cook for 20-25 minutes until the kebabs start to turn golden.

Take them out of the oven and gently use a spatula to loosen the underneath of the kebab, this will shape the kebabs more and also prevent them from sticking when you come to remove them from the tray.

The vegetarian kebabs will feel a little soft to the touch here, this is normal.

Drizzle oil in between the vegetarian kebabs and a little on top too if you like.

Place back in the oven for a further 5-10 minutes until they turn a lovely crisp brown colour.

When the vegetarian kebabs are ready use 2 spatulas to gently remove the kebabs from the baking tray.

With a tea towel remove the metal skewer it should come out of the kebab easily.

Enjoy Chefs vegan kebab recipe.
