Gluten Free English Muffins Recipe

After four attempts we have a gluten-free English muffin we can toast with pride. An English muffin worthy of jam. Worthy of peanut butter. Or a sit down breakfast. Heck, worthy of breakfast in bed. These warm and golden little babies are too crispy-tender good to munch running to the bus stop or strapped in your car, thinking about the onslaught of your daily tasks. These muffins deserve a proper plate. A mug of tea. Your Sunday morning iTunes playlist.
I'm not sure why a simple English muffin is so tricky to recreate gluten-free (and in my case, also vegan- no milk and eggs to help the stubborn gluten-free flours fluff and rise). I thought it would be a snap. So I perused Alton Brown's recipes for inspiration, found his English muffin recipe, and did a quick gluten-free casein-free conversion. It seemed doable. Although I knew from experience that using a griddle to cook gluten-free muffins would be trouble.
I opted for baking the muffins on a sheet lined with my trusty Exopat (using a liner keeps those overly sensitive gluten-free flours from scorching on the bottom). I'm using English muffin rings to help shape the dough (I purchased them at Amazon). A reader suggested on Twitter I could use cleaned out tuna cans, but. That seems a tad unappetizing (intellectually, I know tuna cans would work; emotionally, all I keep visualizing is the mystery neighbor in Neil Simon's Barefoot in the Park who piles his smelly used tuna cans out in the hallway).
Using Alton's basic template the first batch turned out very dense, with no rise and no crunchy edges- though the dough looked promising (pictured above, rising). Dense was not a quality I wanted in my muffin. So I tried again, this time using my own original Gluten-Free Bread recipe as a template (I'm loving the combo of sorghum, potato starch and millet as a flour base for yeasted breads these days). The result was better- but still not quite there.
After a third attempt I realised that the issue might be moisture. I was creating a dough that resembled wheat dough, and I could shape it a bit and pat it into the English muffin rings, but the result was heavy and more resembled a gluten-free hockey puck.
The fourth try was the charm (sometimes perseverance pays off). I added more warm water to the dough (than seemed wise), until it was more of a thick cake batter than a stretchy playful dough.
And sweet bi-locating John from Cincinnatti! It worked.

Gluten Free Maple Meatloaf

Chocolate Sorbet Vegan and Dairy Free

Two trends are sneaking in to recipe searches this week. The first? Super bowl recipes. You know, guy-style chicken chili and Crock-Pot crowd pleasers. Party food for the Big Game. Guacamole and hummus. Nachos. The second trend is a search closer to my own heart and its tender sensibilities. You may have already guessed it. Because you, Wonderful Reader, are smart, savvy and, well. Let's just gush a minute with appreciation. You are downright fabulous (with impeccable taste and discernment, I might add).
The second big trend is a search for romantic recipes and Valentine's Day inspiration. You're not surprised, are you? (See, I knew you were brilliant).
I'd much rather conjure up chocolate recipes than beans and burgers. Sexy food is more interesting than AstroTurf and lines of scrimmage and backfields in motion. And what the Hail Mary is a down, anyway? First down, fourth down. All these downs and off sides. It makes my head spin.

Gluten Free Sweet Potato Fries

Like my pal Kalyn I'm a big fan of sweet potatoes. And sweet potato fries. Kalyn's recipe has a different spice blend than mine but our recipes are quite similar. Check out hers if you don't happen to care for my particular spices. Or get down-and-dirty personal and make up your own signature concoction.
Cooking is all about making recipes your own. Developing your own tastes. Your likes and dislikes. Cooking is flexible. And highly personal. It's not precise like, say, brain surgery. Unless you're baking something fussy. Baking folks swear by precision. But I've never actually been that kind of cook. I'm intuitive. I fly by the seat of my jeans. I look at a glistening picture of pasta and vegetables and I feel inspired. I open my pantry and get juiced to play the What If? Game.
What if I take this ingredient and add it to that ingredient? I wonder. What would that taste like? Then the fun begins.

Gluten Free Chili Our Favorite Recipe

A chilly winter light slices into a SANTA MONICA apartment and illuminates every cobweb. (Obviously, a certain individual has been neglecting house work again). Said individual sighs audibly. Glances sideways into the mirror hanging above the kitchen sink cluttered with coffee spoons, grilled cornbread crumbs and half-filled tea mugs. She could never pass for Martha Stewart. Not in a million years.

Guilt free Snacks Skinny Soup Chocolate and Rapeseed oil on my Kitchen Table

Mmm, chocolate! Lovely Cadbury Chocolate, there really is nothing quite like it. Im a bit of a traditionalist when it comes to my Cadbury flavours, I tend to go for Fruit and Nut or plain Dairy Milk. I would never have picked up these two flavours, but I surely wasnt going to refuse them when they were offered for review!


Not only is each Skinny soup hearty, chunky, filling and flavoursome but each boasts less than 2% fat per carton and less than 150 calories per portion. Furthermore, the soups all contain two portions of your five a day, four green traffic lights and no added sugar, making them the perfect choice for slimmers looking to cut down ahead of the festive season and into the New Year.
Souper Green with Italian Basil Pesto is a delicious medley of peas, leeks, courgettes, spinach, broccoli and green beans, finished with a swirl of Italian Basil Pesto. This satisfying soup is packed with flavour but all green on the traffic light system so a great choice for slimmers. I took this soup to work for a lunch, I felt it needed a little extra seasoning but once that was fixed it had good texture and flavour and was fresh and light.


Borderfields Cold Pressed Scottish Rapeseed Oil is ideal for all kinds of cooking, baking, stir frying and drizzling. I used it to roast some pumpkin chunks for a Kale, Pumpkin and Smoked Cheese Tart the oil has a lovely creamy flavour but it doesnt overpower the flavours of the food you cook in it. I also roasted some the pumpkin seeds with spices to make a tasty snack.
