SANDRAS RASPBERRY NUTELLA PROFITEROLES Mini Cream Puffs

These are decadently petite,
but so very tasty, which will end up being the hit
at any party or gathering...

INGREDIENTS

*Nutella Cream Filling:
1 cup heavy whipping cream
2 tablespoons confectioners’ (powdered sugar)
1/2 cup Nutella
1 teaspoon vanilla extract

**Raspberry Dessert Sauce
1 cup fresh raspberries, or frozen
--(no need to thaw)
2 tablespoons brown sugar
1 tablespoon orange juice
tiny pinch of kosher salt
1 tablespoon cornstarch
½ cup cold water

***Profiteroles (Mini-Cream Puffs):
3/4 cup water
1/4 cup butter
pinch of kosher salt
3/4 cup all-purpose flour
3 eggs, lightly beaten

--Confectioners’ (powder) sugar, for dusting through a fine sieve

METHOD

*Nutella Cream Filling (chill for 1 hour):
Whip the heavy whipping cream in a chilled bowl with chilled beaters of a mixer until fairly stiff peaks form, and slowly add the confectioners’ sugar, and the vanilla until combined. Add the nutella to a separate bowl, and add 1/2 the whipped cream to the bowl with the nutella, and whip until combined. With a spatula, fold in the remaining ½ of whipped cream, and place in refrigerator to chill.

**Raspberry Dessert Sauce:
Combine the raspberries, brown sugar, orange juice, and kosher salt in a cold saucepan. Whisk the cornstarch in a small bowl with the cold water until smooth, and add to saucepan, and then bring to a boil. Reduce to a simmer for about 5 minutes while occasionally stirring, and then strain out seeds it through a fine sieve that has been placed over a small bowl, using a wooden spoon to push all of the sauce through, and then place in refrigerator to chill.

Preheat oven to 375. Spray a mini-muffin pan with baking spray, and set aside. Also, set a cooling rack aside.

***For the Profiteroles (or Mini-Cream Puffs):
In small saucepan combine water, butter and salt; bring to a boil over high heat. Add flour all at once while stirring vigorously with a wooden spoon until mixture leaves sides of pan and forms into a ball. Remove from heat and add the beaten eggs vigorously stirring until smooth and thick. Using small and slightly mounded ice cream scoop (or a tablespoon) place batter into cups. Bake 22-25 for minutes, until medium golden brown on top. Remove from oven and make a small slit ½ way up the sides of each profiterole to release excess steam. Remove profiteroles from pan onto a baking rack and allow to cool (this only takes a few minutes).

Once puffs are cooled, gently cut in half (as in photo), and careful pinch out any obvious large strands of extra dough in bottoms, leaving tops as is. (Be careful not to take out too much or else you’ll expose the bottom.). Spoon or pipe the filling into bottom of profiteroles, and then the sauce, topping with the lids. Place on serving platter, and dust with powdered sugar. – Enjoy!

Tip:  To store, place a piece of bread or non-flavored cracker inside an airtight container, and place profiteroles in a single layer.

Cream Cheese Alfredo Sauce

A creamy Alfredo sauce is probably the quickest and easiest pasta sauce to make. Made simply and incredible over so many dishes. Just a very simple sauce with few ingredients. My family loves this sauce. 


Ingredients: 
        
1/2 stick of butter (50 grams)
8 oz cream cheese
1 cup milk
1 cup heavy whipping cream
3-4 oz grated Parmesan
5 cloves garlic
1 tbsp  parsley flakes
Black pepper
Salt to taste


 Melt butter with cream cheese.
Whisk it until well combined. 
Slowly add milk with whipping cream while mixing. 
Add all the rest of the ingredients. Bring it to a boil cook for 2 min until  Parmesan melts. Serve hot with pasta.

Chocolate Lime Ice Cream


What do you want to eat when the temperatures rise?
Why ice cream of course!

When I was at the Highland Show, the lovely Claire from Mackays, gave me some samples to bake with as part of "Baking with Mackays". I dont know about you, but Im not all that keen on standing by a hot oven when the sun is shining outside, so I looked for another way to use the delicious preserves, made in Scotland, in a creative way. I love Lemon Curd but have never tried Lime Curd, Mackays Lime curd includes eggs, butter, limes and sugar and is delicious spread on hot buttered toast.  Eggs, butter and sugar are the ingredients needed to make a custard and in many ways a curd is a custard, by adding cream its a short cut to making ice cream.  I was conscious that the theme for We should Cocoa this month was ice cream, so thought about how I could include chocolate. I have a bit of a soft spot for those, old fashioned sweets, Chocolate Limes, its such a great combination of flavours that I thought it was worth trying in ice cream too.



Chocolate Lime Ice Cream
300ml double cream
1 jar (340g) Mackays Lime curd
½ lime juice and zest
100g chocolate chips
1. Whip the cream until it is floppy, add the lime curd, zest and juice. 

 

At this point I put the mixture into my ice cream maker, it churned away, but 20 minutes later when it should had been turning solid, it was just slightly more chilled.  I picked up the bowl of the ice cream maker and realised that it was leaking bluey green stuff from the bottom.  Fortunately none of this came near the ice cream, so I scooped it up and put it into a box, mixed in the chocolate chips and put it into the freezer for at least four hours or, preferably, overnight.

Because of the high sugar content in the curd, the ice cream doesnt go rock hard, nor does it form ice crystals so you really dont need an ice cream machine to make it.


I used this excellent Trigger Ice Cream Scoop from Oxo Good Grips to serve up my ice cream.  I have three ice cream scoops, none of which have ever been terribly satisfactory, but this one scoops like a dream and the trigger action deposits the ice cream into your dish in a neat ball, it also goes in the dish washer which is a real bonus.

 The Chocolate Lime Curd ice cream was very creamy but the sharp lime flavour cut through the richness and the little nuggets of dark chocolate really did make it taste like those Chocolate Lime sweets from my childhood.

Sweet Pirojki Filled with Cream Cheese and Poppy Seeds

Baked pirojki are everybodys favorite "sweet pirogi". This delightful combination of cream cheese and poppy seeds is going to make you taste buds dance. It gives such pleasing taste. First time I tried these pirogi I loved it so much. I never made poppy seeds filling before because it was too dry for me. But when you add cream cheese to it, that becomes scrumptious.

Ingredients:
12 oz warm milk

1 stick of melted butter

3 eggs

2 tbs sour cream

1 cup sugar 

1 tsp salt

2 tsp dry yeast
1 tsp vanilla
5 1/2 cups flour (I use Canadian flour)


Mix all ingredients in the bread maker. Set it on dough.  


For sweet fillings we use one of these choices:
  • Shredded apples steamed with butter and cinnamon
  • Blueberries
  • Any fruit preserve 

 Mix all liquid ingredients first.

Add dry ingredients. Mix with a spoon. Set on dough.











                                 Poppy Seeds Filling: (recipe from Olgas factory)

1 3/4 cups poppy seeds 
1 cup milk
1/2 stick butter
1 cup sugar
1 pinch of salt
2 eggs, beaten


Grind poppy seeds with a coffee grinder or magic bullet. I did 1/2 cup at the time for 30 seconds.
Heat the milk, butter, salt and sugar on medium heat until the sugar dissolves.
Fluff the eggs.
Slowly pour in a small amount of the hot milk into the eggs, mixing it fast. This will prevent the eggs from scrambling. When you add about half of the milk to the eggs, pour the egg mixture back into the saucepan and cook on medium-low heat until the mixture thickens, just like making pudding.
Add poppy seeds. Mix well and let it cool.





    

    

   Cream Cheese:
16 oz cream cheese (softened)
1/2 cup powder sugar
2 egg yolks
1 tsp vanilla


Cream cheese need to be softened for few hrs at room temperature. Mix cream cheese until fluffy. Add powder sugar, mix.
Add vanilla.
Add egg yolks. Mix until smooth.







Fluff 2 egg whites in the separate bowl.






Now everything is ready to start making pirogi.
This is a traditional way of making pirogi. For the  pirog you need to roll the dough like rectangle. Spread cream cheese then spread poppy seeds and roll it in. My next step picture was blurry  so i did not put it on.
Put pirog in oiled baking sheet. Spread egg whites on top. Put it in the oven on 170F for 20 min.
I like pirojki better so i made em.  Make little circles Put 1 tsp of cream cheese and 1 tsp of poppy seeds.



Then pinch the edges together to seal the dough. Turn over and put sealed side first into baking dish.
Dip one side in oil so it wont stick together.
Put in the oiled baking dish. Spread egg whites on top. Put it in the oven on 170F for 20 min. 




You can add any type of fillings.
After 20 min turn on 325F bake until golden brown.
Now enjoy pirojki with your favorite tea or coffee.

Grilled Basil Pesto Flatbread with Petite Filet and Horseradish Cream



So,  the other day I was at my Moms and she was fretting over the abundance of basil she had growing in her herb garden and how she could possibly use it all.  I took that as the perfect invitation to make her some homemade basil pesto, for purely selfish reasons of course, as I was secretly hoping she would give me a jar to go. Of course, she did and I put it to good use as a topping on this grilled flatbread with heirloom tomatoes. 

I also started experimenting with using hard wood chips in my gas grill.  Last night, with the help of a foil packet of water soaked hickory wood chips, I grilled this steak which was gently infused with the rich smokey flavors and aromas.  Topped with a horseradish cream it was an outstanding summer grilled meal. 

Pesto
2 cups basil
3 garlic cloves
1/3 cup walnuts
1/2 cup parmesan cheese
1/2 - 3/4 cup olive oil
salt
pepper

Place all of the indgredients, except for olive oil, in a food processor and pulse until smooth.  Gradually, add the olive oil while the processor is running.  It will keep for quite some time if kept in a jar under a layer of olive oil and stored in the refrigerator.    



Basic Pizza Dough adapted from a recipe by Chris Bianco in "The Gourmet Cookbook"

1 (1/4-ounce) package active dry yeast
1 3/4 cups uncleached all-pupose flour, plus more for kneading and dredging
3/4 cup warm water
1 1/2 teaspoons salt
1 1/2 teaspoons olive oil

Stir together yeast, 1 tablespoon flour, and 1/4 cup warm water in a measuring cup and let stand until surface appears creamy, about 5 minutes.

Stir together 1 1/4 cups flour and salt in a large bowl. Add yeast mixture, oil, and remaining 1/2 cup warm water and stir until smooth. Stir in enough remaining flour (about 1/2 cup) so dough comes away from the sides of the bowl.

Knead dough on a dry surface with lightly floured hands (reflour hands when dough becomes too sticky) until smooth, soft, and elastic, about 8 minutes. Form into 4 balls for individual pizzas and put on a lightly floured surface and generously dust with flour. Loosely cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 1/4 hours.

To shape the dough for grilling, do not punch down dough. Carefully dredge 1 ball of dough in a bowl of flour to coat and transfer to a dry work surface. Holding one edge of dough in the air with both hands and letting the bottom touch work surface, carefully move hands around edge of dough (like turning a steering wheel), allowing the weigh of dough to stretch to roughly 4 inches. Transfer to a floured tray and work edges with fingers to get desired shape. Let side on tray for about 15 minutes and prepare per recipe.


Horseradish Cream
2 tablespoons prepared horseradish
1 tablespoon mayonnaise
2 tablespoons sour cream
1/2 teaspoon Worcestershire Sauce
salt
pepper

Combine all in a mixing bowl and let it sit in the refrigerator for approximately 1 hour to let the flavors combine.

CLASSIC BANANA CREAM PIE

Every family holiday dinner, I make way too many desserts. There is usually a cheesecake, a cream/pudding type pie, a fruit pie, cookies and something "experimental". That just means it is a recipe that I really want to make but I know picky-picky husband wouldnt touch it, so I need my family to "step in" and try it. 

As fun as it is to try new recipes, the old classics are always a hit; this banana cream pie is a tried and true family classic; it is the "real deal". It has a baked graham cracker crust, cooked vanilla custard, bananas and the most delicious whipped cream topping Ive ever tasted (it has cream cheese in it)

GRAHAM CRACKER CRUST
1½ cups finely crushed graham crackers
¼ cup white sugar
6 tablespoons melted butter
Mix everything well and pat into a 10" pie plate. Bake at 350 for 8 minutes.

PIE FILLING
3 tablespoons cornstarch
1 and 1/3 cups water
1 14 oz. can sweetened condensed milk (see note)
3 egg yolks, beaten
2 tablespoons butter
1 teaspoon vanilla extract
2 medium ripe bananas (cubed)

In a heavy saucepan over medium heat, dissolve the cornstarch in the water; stir in the sweetened condensed milk and egg yolks. Cook until thickened and bubbly remove from heat; add butter and vanilla. Set aside to cool slightly. Cube the bananas and fold into the slightly cooled pudding. Pour into cooled crust and lay some plastic wrap on the surface of the filling so that it doesnt form a skin. Chill in the fridge for about 3 hours. Frost with whipped cream topping.

WHIPPED CREAM (Stabelized)
I hope you do not skip this step because it really is delicious and "makes" the pie. This is my new "go to" whipped cream recipe.

(1) 8 ounce cream cheese (room temperature)
½ cup granulated sugar
1 teaspoon vanilla extract
2 cups heavy cream

With your electric mixer, beat the cream cheese, sugar and extracts in a large bowl until smooth (scrape sides to make sure you dont have any cream cheese sticking to the interior of the bowl). While the beaters are still running, slowly add the whipping cream (stop a couple times and scrape the bowl). Beat until you get stiff peaks. This makes enough topping to cover a 10" pie generously.

NOTE: Make sure you use sweetened condensed milk in the pie filling (and not evaporated milk).

Ingredients
  • Evaporated milk 1tin
  • Condensed milk ½ tin
  • Cream whipped 1 ½ cup
  • Coffee 1 tbsp
  • Praline for decoration
Ingredients to make praline
  • Sugar 1 cup
  • Almonds ½ cup
Method
  • Firstly to make praline heat sugar in a saucepan on low flame until it melts.Add almonds and cook for another 1 minute, pour on a well greased tray.Allow to cool and crush praline.Now beat chilled evaporated milk till double in volume. 
  • Add in chilled condensed milk with dissolved coffee and whipped cream.Put it in an air tight container till half set. Remove and fold in the prepared praline.

Vanilla ice cream Vanillurjómaís

Because it’s warm(-ish) and sunny outside, here is a lovely and fattening recipe for home-made ice-cream. My mother makes this for special occasions, like Christmas and easter. It is very rich and creamy, and absolutely delicious!

1/2 litre heavy cream or whipping cream
5 egg yolks (use the whites to make meringue drops
75 g sugar
vanilla essence to taste

Mix egg yolks, sugar and vanilla essence* and stir until the sugar has dissolved. Whip the cream until it is quite stiff and fold into yolk/sugar mixture. Pour into a mould and freeze, or use an ice-cream maker. Use the egg whites to make meringue tops to serve with the ice-cream.

*Note on vanilla use: A little goes a long way. The vanilla taste is stronger once the custard has been frozen. You can also use vanilla sugar or a vanilla bean (soak it in the milk).

Variations: Experiment with different flavourings and extras: chocolate chips, small pieces of preserved fruit, liqueurs, flavour essences.

Goes well with Crème de Menthe and Mint Chocolate liqueurs, chocolate sauce, Mars sauce (melt a large Mars bar in cream and mix well), hot fudge, hot caramel sauce, meringue drops, preserved fruit in syrup or fresh fruit, especially strawberries.
