BROWN RICE KUSKA









Kuska is a type of plain briyani without veggies or meat. The rice is usually cooked in cooked in chicken broth along with the spices and served with a spicy side dish. There are different versions of kuska like adding coconut milk or yogurt. Preparing kuska with brown rice was a little bit challenging. When I tried this for the first time with my usual method of making briyani, the rice took a long time to cook and I was not satisfied with the overall taste. This time, I let the rice cook in the broth and then added it the briyani masalas and baked everything for sometime. This way the rice absorbed all the briyani flavors and tasted really great. Actually I got a double thumbs-up from my hubby for this kuska. I also made Vellore brinjal serwa for the first time and this has changed my husband into a brinjal convert. This is the first time he loved any brinjal dish, so I think I’ll be getting more requests for this combo from now on :) The brinjal serwa can be found at Malar or at or Viki .



INGREDIENTS:

1. Brown basmati rice, 1 cup.

2. Onions, medium-size, 3.

4. Tomatoes 2.

5. Green chilies, 1-2.

6. Ginger-garlic paste, 1 tablespoon.

7. Chili powder, 1 teaspoon.

8. Chopped mint leaves, ½ cup.

9. Curry leaves and cilantro for garnishing.

10. Cinnamon, 1 small stick.

11. Bay leaf, large, 1.

12. Cloves, 2.

13. Star anise, 1.

14. Cardamom, 2 pods.

15. Fennel seeds, 1 teaspoon.

16. Briyani masala powder, 1 teaspoon.

17. Chicken broth or vegetable broth for cooking the rice, 1 cup mixed with 1 cup of water. The broth can be store bought or homemade, even fat-free versions are available in the groceries.

18. Yogurt,1 tablespoon.

19. Salt as per taste.

20. Cashews, 1 tablespoon.



PREPARATION:

Wash the rice well and soak it for 30 minutes and cook the rice in the chicken or vegetable broth until the grains are fluffy. The rice can be cooked either in pressure cooker or microwave. If pressure cooker is used for cooking, cook the rice just up to 3 whistles. Let the rice cool. Meanwhile dice the onions and tomatoes finely. Heat a thick bottomed pan, with 2 tablespoons of oil. When the oil turns hot, add all the spices and cashews and let them fry for a minute. Then add the chopped onions and curry leaves and sauté them for a few minutes until the onions turn brown. Now add the chopped tomatoes, slit green chilies, ginger-garlic paste and keep sautéing until everything is blended. Add the chili powder, briyani masala, yogurt, and salt and let it cook for a few more minutes. When the mixture is well blended and good smell starts coming from the mixture, add the cooked brown rice, chopped mint and cilantro leaves, mix everything and lower the flame. Cook closed for 15 minutes under low flame and switch off the stove. Another method is at this stage, the contents can also be transferred to a baking dish and closed with an aluminum foil as tightly as possible and cooked in a preheated oven for 15 minutes at 350 degrees. Serve hot kuska with raita and any spicy vegetarian or non-vegetarian dishes and enjoy.

CHEDDAR BACON HASH BROWN SIDE DISH

I needed an easy side dish to go along with some fried chicken yesterday and decided to throw together some "cheater" Au gratin potatoes. I had a bag of fresh hash browns (called Simply Potatoes) so I decided to use those (they are sold, in our market, next to the eggs). I made a quick white sauce, stirred in the hash browns, some cheddar, a little sour cream and some bacon. What more can you ask for?? They were very cream & cheesy-delicious.

1 package Simply Potatoes
3 tablespoons butter
3 tablespoons flour
1 teaspoon salt
½ teaspoon black pepper
2¼ cups milk
¼ cup chopped onions sauteed
2 cups cheddar cheese shredded
¼ cup sour cream
4 slices bacon fried crisp and crumbled

This is what the potatoes look like:

In a small, heavy bottomed sauce pan, melt 3 tablespoons butter and add 3 tablespoons flour and simmer for about a minute; stir in the sauteed onions and crumbled bacon. Whisk in the milk (whisk quickly, at first, so you dont get lumps) and cook until the mixture thickens. When it comes to a boil, remove from heat and stir in the cheese, potatoes and sour cream. Pour into a greased 2 quart baking dish and bake at 350 for 35-45 minutes or until bubbly and potatoes are tender.

I dont see why you couldnt use frozen hash browns (as long as you thaw them first).

Inside Out Brown Sugar Glazed Jalapeno Duck Poppers

Per my previous post Brining Wild Duck, I essentially said that the taste of wild duck usually has me running for the hills. But I was determined to like it. Waterfowl is a huge part of the hunting world, and it was a real shame that I did not care for it. So this week, I set out to find a way to get rid of the gamey taste of duck. I brined the duck breasts for three days, and my efforts were paid ten times over!

What we have here are duck breasts which have been brined for 3 days, then marinated in olive oil, rosemary, garlic and red wine vinegar. They were then filled with cream cheese and julienned jalapeno peppers, then wrapped in bacon and glazed with brown sugar, nutmeg and cinnamon, which caramelized beautifully over hot coals. 


Well, in our unfortunate case, we had to broil them. A storm swept over Southern California yesterday. We had the coals started in the chimney and everything, and when Rick came out to check on them, evil struck! The air was so thick with moisture that it made the coals fall apart into a mound of useless hot dust. So that really sucked, but the broiler worked just fine. 

Rick and I absolutely loved these! They were spicy, salty and sweet all at the same time. They certainly didnt last long. We hope you all love them too!

Servings: 2 appetizer servings (10 poppers)
Prep Time: 1-3 days, depending on how long you want to brine
Cooking Time: 10-15 minutes
Ingredients:
- 2 brined duck breasts, cut into 10 pieces (brining is optional)
- 5 slices of bacon, cut into halves
- cream cheese
- 1 jalapeno, cored/seeded and julienned 
- 10 toothpicks
Marinade:
- 2 tbs. olive oil
- 2 tbs. red wine vinegar
- 1 garlic clove, minced
- 1/2 tsp. dried crushed rosemary
- freshly ground pepper, to taste
Brown Sugar Glaze:
- 3 tbs. brown sugar
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 1/2 tbs. water

1. Butterfly the breast pieces. The bright red color reminded us of sushi tuna.
To butterfly, cut the duck breasts horizontally, but not all the way through. Lay flat. You now have thinner, larger pieces.
2. Lay the butterflied duck pieces flat between two pieces of plastic wrap. Then lightly pound with a flat mallet to flatten the pieces a little more. We used the poor mans rolling pin. Move the duck to a medium bowl.
3. In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, rosemary and freshly ground pepper.
4. Add the marinade to the duck. Marinade at room temperature for at least 20 minutes. 
5. To make the glaze, combine brown sugar, nutmeg and cinnamon. 
Then add water and whisk well.

Taking notes as we go ... all a part of the recipe developing process!
At this point, you should probably get your grill ready.

6. Remove the duck from the marinade and fill with cream cheese and jalapeno match sticks. 
Then roll everything together with half a slice of bacon. Pierce a toothpick through the poppers to keep everything intact for grilling.
Mmmmm....


7. Grill (in our case broil) the poppers until the bacon is cooked on both sides. When theyre just about done, baste both sides with the Brown Sugar Glaze. Dont do this beforehand because the glaze will just burn.
MEAT CANDY! 
Arent they pretty? They taste just as good as they look. 


Remove toothpicks and serve!

Roast beef with brown sauce


Ingredients
  • Undercut 1 kg
  • Oil ¼ cup
  • Mustard powder 1 tsp
  • Salt 1 ½ tsp
  • Black pepper ½ tsp
  • Black pepper crushed 1 tsp
  • Lemon juice 3 tbsp
  • Wooster sauce 3 tbsp
  • Ginger garlic paste 1 tbsp
Ingredients for brown sauce
  • Onion finely chopped 2 tbsp
  • Stock 2 cups
  • Oil 4 tbsp
  • Flour 3 tbsp
  • Salt ½ tsp
  • Black pepper ½ tsp
  • Burnt sugar syrup 2 tbsp
Method for roast beef
  • Prick undercut piece with fork well, marinate with salt, pepper, mustard, ginger garlic paste, Wooster sauce and lemon juice, heat oil in a pan put marinated undercut, fry for 10 minutes, add 2 cups water, cover, cook for 30 minutes until beef tender and water dries, remove, cut in slices, serve hot with boiled vegetables and brown sauce.
Method for brown sauce
  • Heat oil fry onion golden brown add in flour with salt and pepper, add stock cook till sauce thick, lastly add burnt sugar syrup to give brown color.
