Pan Fried Oven Chicken
Ingredients
- Whole chicken with skin 1
- Onion 1
- Capsicum chopped 1
- Spring onion 2
- Curry leaves few
- Garlic chopped 4 – 5 cloves
- Parsley chopped ¼ bunch
- Ginger chopped 1 piece
- Black pepper crushed 1 tsp
- Black pepper powder 1 tsp
- Corn flour 1 tbsp
- Cinnamon powder ½ tsp
- Lemon juice 2 tbsp
- Olive oil 4 tbsp
- Salt to taste
- Green and red grapes 250 gm

- Fruit cocktail 1 cup
Method
- Finely chop 1 piece of ginger and 4 – 5 cloves of garlic.Heat 4 tbsp oil in a pan, add chopped ginger garlic and chopped onion. Fry well till onion is tender.Now add 250 gm grapes or 1 cup fruit cocktail. Cook for 2 – 3 minutes.Then add salt to taste, 1 tsp crushed black pepper, 2 chopped spring onion leaves and 1 chopped capsicum. Fry well for 1 – 2 minutes.
- Stuff half of the prepared mixture in whole chicken. Marinate hole chicken with a little salt, 1 tsp black pepper and 2 tbsp lemon juice. Also brush with a little oil.Now put stuffed chicken in a greased pan, cook till its color turn to golden brown. Remove from pan and put chicken in an oven proof tray.
- Add 1 glass of water and roast on 180 degrees for 25 – 30 minutes.Remove chicken and keep aside, mix the remaining gravy with remaining fruit cocktail mixture. Fry well on high flame. Then add 1 tbsp corn flour paste and ¼ bunch of chopped parsley. Turn the flame of.Cut chicken into pieces, pour prepared sauce on top and serve hot.
